There is only one thing better than eating your own homemade ice cream and that is watching it thicken up into ice cream in front of your eyes. The easy-lock lid is made of transparent plastic which just sits over the freezer bowl and locks into place. It has an opening in the top so that you can pour your ice cream batter into the ice cream maker once you have switched it on and you can also use it to add in chips and nuts or any other extras that you like about 5 minutes before it finishes.
Part of the problems people have with ice cream makers is the mixing paddle not being strong enough to handle stirring the thickening ice cream so they snap or bend but the paddle in the Cuisinart Ice-21 isn’t attached to the motor, it sits inside the bowl and is held in place by the lid and it doesn’t turn around, the bowl does. It’s made of strong durable plastic which can cope with the ice cream as it thickens and deals with any kind of extras that are added.
Double-insulated freezer bowl
The machine is a freezer bowl type of ice cream maker, and what that means is that you have a bowl that has a double wall. Inside that double wall is a freezable cooling liquid, when you’re bowl is at room temperature you can shake the bowl and hear it sloshing about. The frozen bowl is what freezes your ice cream batter so it needs to be frozen at 0 degrees for at least 16 – 24 hours to get it cold enough. It’s best if you can place it at the back of the freezer which is the coldest part to get the best results. If you want to know if it is frozen correctly you just have to shake it and if there is no sound of liquid you’re good to go. You don’t want to take your bowl out of the freezer until you’re ready to make your ice cream and if you can keep your bowl in the freezer all of the time you will always be ready to make ice cream.
Capacity of 1-1.5 quarts
You can make up to 1.5 quarts of ice cream in the freezer bowl. This is a good size amount to satisfy your needs, but if you would like to make as much as 2 litres you could consider a Cuisinart Ice-30bc which is a similar ice cream maker to the Ice-21 but has a larger capacity. With 1 – 1.5 quarts you can make more ice cream as you get in a carton that you would buy and it can taste just as good.
You need a motor that is strong enough to churn your ice cream when it starts to thicken without burning out when the going gets tough. The Cuisinart ice-21 comes with a heavy-duty motor in the base which is strong enough to turn the bowl. The bowl locks onto the base and turns to churn the ice cream rather than the paddle and it can keep going happily as your ice cream gets thicker.
The base comes with rubber feet to stop it from moving around on the counter top and it also comes with cord storage so you don’t have to deal with trailing cables when you store your ice cream maker in the cupboard.
Frozen treats in 20 minutes or less
You can use a standard recipe for ice cream from the instruction booklet that comes with your ice cream maker or your own recipe, mix it up and chill it in the fridge, some people even stand it in the freezer for 10 minutes. Once you have chilled it assemble your ice cream maker and switch on, pour in your mixture and let it start mixing. It takes 15 – 20 minutes for it to get to a soft serve consistency which is what you would expect it to get to. You can eat your ice cream at this consistency if you like it soft or you can decant it into a plastic storage container and freeze it for a couple of hours to get it to a stiffer consistency.

Around 10 – 15 minutes when the mixture is thickening up you can add your nuts or chips or fruit bits so they get well mixed in and they won’t drop to the bottom of the ice cream. Just drop them into the ingredient spout in the lid. Once you have removed the ice cream from the bowl the easiest way to clean it out is to let it come to room temperature then it is easy to wash out without scratching the surface. The rest of the unit can be wiped clean with a damp cloth and the lid and paddle are easily washed too. Just store your clean bowl back in the freezer for next time.
